  • 2 tablespoons olive oil
  • 1 large shallot, finely chopped (about ¼ cup)
  • 2 cloves garlic, minced
  • Kosher salt and freshly ground black pepper
  • 2 bay leaves
  • 5 tablespoons unsalted butter
  • 2 cups arborio rice (see Cook's Note)
  • 1 cup dry white wine
  • ¾ cup freshly grated Parmesan, plus more for garnish
