Instant Pot Flan
Ingredients

  • 4 large eggs
  • 1 can (14 oz) sweetened condensed milk
  • 1 can (12 oz) evaporated milk
  • 1 teaspoon pure vanilla extract
Steps
  1. On low heat stove top, slowly melt the sugar until it turns into a caramel color. Stir continuously. Pour the caramel in a 1.5qt stainless steel flan mold and ensure that the bottom is coated well. I got my flan mold from Amazon.
  2. BEWARE: the caramel is extremely hot so make sure you use mitts when pouring in the mold!
  3. In a separate bowl, beat the eggs real well. Slowly add the sweet condensed milk and then the evaporated milk. Add the vanilla. Mix really well. Pour the mix in the mold and seal with the lid it comes with.
  4. Add 1 ½ cups of water in the IP. Make sure you use the trivet that came with the IP. Place the flan mold in the IP. Seal and set on high pressure for 8 minutes. NR for 10 minutes.
  5. When done, refrigerate the flan for at least 12 hours. Use a sharp knife to loosen the edges of the mold before you flip it upside down onto a plate.
