Coconut flour pancakes

Servings: serves 2, makes about 6 pancakes

Ingredients
  • 4 TBSP coconut flour
  • 4 oz cream cheese, room temperature
  • 4 eggs
  • 2 tsp vanilla extract
  • 2 tsp baking powder
  • 1 to 1.5 TBSP granulated swerve
  • dash of salt
Steps
  1. combine dry ingredients in mixing bowl.  combine wet ingredients in seperate bowl.  add to dry ingredients.   cook in skillet or griddle until golden brown.
Notes
  • for waffles, reduce baking powder to to 1.5 tsp & add 2 TBSP melted butter
