Ingredients
  • subheading: Muffins:
  • 2 C AP flour
  • 1 t baking powder
  • ½ t baking soda
  • ½ t salt
  • 1 t cinnamon
  • ½ t nutmeg
  • ½ C butter
  • ½ C white sugar
  • ½ C brown sugar
  • 2 eggs
  • 1½ t vanilla
  • 1½ C peeled and chopped apples and ½ C shredded apple (Mutsu are good)
  • subheading: Topping:
  • ⅓ C packed brown sugar
  • 1 T AP flour
  • Dash cinnamon
  • 1 T butter
  • 2 T chopped pecans
Steps
  1. Preheat oven to 375°.
  2. Combine muffin recipe dry ingredients and set aside.
  3. In large bowl, beat together butter, sugars and eggs until smooth. Mix in vanilla. Stir in chopped and shredded apples. Gradually blend in flour mixture and stir well. Spoon mixture into greased 12 cup muffin pan.
  4. Topping: In small bowl, mix together sugar, flour and cinnamon. Using your fingers, work in butter until mixture is like wet course sand. Sprinkle over tops of muffins.
  5. Bake 20 minutes until toothpick inserted comes out clean. Allow to sit for a few minutes, then remove muffins from pan to cool on a wire rack.
