  • Unsalted Butter: ⅓ cup, divided
  • All-purpose Flour: ⅓ cup
  • Whole Milk: 2 cups
  • Garlic Powder: 1 teaspoon
  • Salt: ¾ teaspoon, or to taste
  • Onion Powder: ½ teaspoon
  • Freshly Ground Black Pepper: ½ teaspoon
  • Ground Nutmeg: ¼ teaspoon
  • Mixed Shredded Cheese: 6 ounces (mozzarella, provolone, Parmesan, Asiago, cheddar), about 1.5 cups
  • Unseasoned Panko Bread Crumbs: 2 to 3 tablespoons
  • Chopped Chives or Green Onion: For garnish (optional)
