Ingredients
  • Crepes:  One ¼ cup flour, one ¼ cup water, 1 teaspoon salt, four eggs, beaten
  • Beat together until smooth. Spray frying pan with Pam and cook over medium heat till crepes done
  • Filling:  1 pound ricotta cheese, one egg, beaten, ¼ teaspoon salt, ¼ teaspoon pepper, ½ cup Parmesan cheese. Mix together

  • Shredded mozzarella cheese
Steps
  1. Place some mozzarella cheese and crêpe. Add filling and roll up. Freeze seam side down wrapped in plastic and put in bags.
  2. To bake:  spray glass pan with Pam and put a layer of sauce on the bottom. Put crepes in the pan, seam side down, cover with sauce and mozzarella cheese. May sprinkle with oregano and parsley flakes. Bake covered with foil for 45 minutes at 350°
