Rice Pudding

Servings: 6 to 8

Servings: 6-8
Ingredients
  • 1½ C short grain white rice
  • 2¼ C whole milk
  • 2 C Half and half
  • ⅔ C sugar
  • 1T vanilla extract or 1 split bean
  • ½ t ground cinnamon or 1 cinnamon stick
  • A big handful of raisins
Steps
  1. 1. Coat the lines with cooking spray or butter.
  2. 2. Combine all ingredients, and stir to blend. Lock the lid in place and cook at low pressure for 17 minutes.
  3. 3. Quick release and remove lid. Stir to remove lumps and add raisins.
  4. 4. Serve warm or chilled.
