  • 6 boneless, skinless chicken thighs
  • Salt and pepper, as needed
  • 1 cup corn starch
  • Olive oil or another neutral-flavored oil, for cooking
  • Chopped scallions, both whites and greens, for serving
  • Cooked white rice, for serving (optional)
