Stuffed Bell Pepper W/ Beef & Tomato

  • 14 oz ground beef 95% lean
  • 0.50 cup diced tomatoes canned
  • 4 tablespoon tomato paste
  • 4 tablespoon minced onion
  • 4 teaspoon minced garlic
  • 4 sprays Coconut Oil Spray AP
  • 4 teaspoon Italian seasoning
  • 1 teaspoon sea salt
  • 1 teaspoon freshly ground pepper
  • 4 red or yellow bell peppers* small, approx 110g/3.8oz each pepper - AP
  • parsley Finely chopped for garnish

  • Substitute endive for the red bell pepper. Reduce cooking time to 5 to 10 minutes.
