Shepard's Pie with Mac & Cheese Topping...It's Like a Céilí in Your Mouth.
Ingredients
  • subheading: Mac & Cheese:
  • ½ cup butter
  • ½ cup flour
  • 3 cups whole milk
  • 1 tsp table salt
  • ½ lb pasta (½ box)
  • 2 cups grated sharp/aged english cheddar
  • ½ cup Parmesan
  • Panko bread crumbs

  • 1lb ground lamb or beef
  • 1tbsp Worcestershire Sauce
  • ½ cup red wine
  • 1 cup chopped onion
  • 1 cup fresh/frozen mixed vegetables (peas, carrots, corn)
  • 2 cloves garlic, minced
  • 1 teaspoon thyme
  • 2 teaspoons rosemary
  • Salt
  • Pepper
  • Oil
Steps
  1. subheading: Noodles:
  2. Boil the noodles a little firmer than al dente. Toss with oil and set aside. In a large sauce pan over medium high heat, melt the butter. Add the flour slowly and whisk vigorously (Extremely important for a smooth, creamy sauce!). When the mixture starts to bubble, lower heat and whisk slowly until the flour turns light brown and you smell a little toastiness. Remove from heat. In a separate sauce pan heat milk until steaming, but do not boil. Over medium heat, slowly pour the milk into the flour/butter mixture and whisk vigorously. Mix in salt. Add the cheeses and mix until smooth. Taste and add more salt if necessary. Mix in pasta and set aside.

  4. Over medium-high heat, heat the oil, add the ground meat, salt and pepper. Cook the ground meat until it is browned and cooked through. Set aside in a bowl. In the same pan add chopped onions and saute until they take on color. Add garlic, and vegetables. Continue cooking until veggies are thawed and cooked. Add the browned meat. Add red wine, Worcestershire sauce, and the herbs. Reduce heat to simmer for 3 minutes to reduce the wine. Remove from heat and pour the mixture into a casserole dish. Spoon over mac and cheese. Top with panko bread crumbs and place in preheated oven. 400 degrees for 15 minutes. Allow to rest for 10 minutes before stuffing your face!
