Apple Carrot Cupcake with Cream Cheese

  • by Den's Bakeyard ( Makes 6)
  • 70g light brown sugar
  • 100g self raising flour
  • ½ tsp B soda
  • 1 tsp cinnamon powder
  • 1 egg (65g)
  • 75g coconut oil
  • 75g shredded carrot
  • 35g shredded apple
  • 1. Preheat oven 180C
  • 2. Line muffin cups on tray
  • 3. Mix sugar, flour, soda, cinnamon powder together
  • 4. Whisk egg & oil together & pour into the dry ingredients.
  • 5. Add carrot & apple & mix for till just mixed. Do not overmix.
  • 6. Bake for 20 to 22 min.
  • Cream cheese frosting
  • 50g butter ( cut into cubes at room temp)
  • 150g cream cheese ( room temp)
  • 40g icing sugar
  • ½ tsp vanilla
  • 1. Cream cream cheese till creamy
  • 2. Add butter ( one at a time) & cream together.
  • 3. Add vanilla
  • 4 Add icing sugar & cream till creamy.
  • * This is a recipe I tweaked in the process to bake something healthier for my 4 yr old son.
