Sicilian Meatballs in Spicy Tomato Sauce
Ingredients
  • Spicy tomato sauce
  • 700 g bottled passata
  • 410 g canned crushed tomatoes
  • 1 medium brown onion (150g), chopped finely
  • 45 g canned anchovies, drained
  • ¼ tsp dried chilli flakes
  • 3 cloves garlic, sliced thinly
  • 1 cup (250ml) chicken stock
  • 2 cups (500ml) water
  • ⅓ cup fresh oregano leaves, torn
  • Meatballs
  • 600 g minced lamb
  • 1 cup (70g) stale breadcrumbs
  • 2 tbsp pine nuts, chopped coarsely
  • 1 tbsp finely grated lemon grind
  • ¼ cup (40g) sultanas, chopped coarsely
  • ¼ (20g) finely grated pamesan
  • ⅓ cup loosely packed small fresh basil leaves
