Ricotta and Green Veg Fritters
Ingredients
  • 120g bag baby spinach leaves (you will need ½ cup)
  • 1 cup (150g) frozen peas, thawed, lightly mashed
  • 1 medium zucchini (175g), coarsely grated
  • 2 green onions, finely sliced
  • 4 eggs
  • 2 cloves garlic, crushed
  • 1 cup (125g) Perfect Italiano Traditional Grated Parmesan
  • Salt and ground white pepper, to taste
  • ¾ cup Self Raising Flour
  • 250g Perfect Italiano Ricotta
  • Light olive oil, for shallow frying
