Ingredients
  • 4ea Gluten-free Vegan Chicken Thighs (see below)
  • ⅓c Red Pepper (medium chopped)
  • ⅓c Yellow Pepper (medium chopped)
  • ⅓c Green Pepper (medium chopped)
  • ⅓c Onion (chopped)
  • ⅓c Tomatoes (chopped)
  • ⅓c Potatoes (chopped)
  • 1-½T Garlic (chopped)
  • 2T Scallions (chopped)
  • 1c Water
  • Sea Salt (to taste)
  • A really good caribbean curry powder will suffice,  but I wanted to jazz up my Badia brand with some additional spices.
  • ½t Curry Powder
  • ½t Turmeric
  • ¼t Cumin
  • ¼t Cayenne
  • ½t Thyme
  • ¼t Onion Powder
  • ⅛t Black Pepper
  • 1c Water
  • 1T Canola/Grapeseed Oil (your preferred cooking oil )
