Preserved Lemon Citrus Chicken with Chervil Gremolata
Ingredients
  • 1 chicken, cut into pieces, about 4 to 4 ½ pounds
  • 1 tablespoon chopped fresh chervil
  • Salt and pepper

  • 1 or 2 small preserved lemons, thinly sliced, seeded, and rinsed
  • 2 cloves garlic, thinly sliced
  • Zest of ½ orange
  • Zest of ½ lemon
  • ¾ cup dry white wine
  • 1 cup chicken stock
  • 2 tablespoons crème fraîche

  • 1 clove garlic, finely chopped
  • Zest ½ orange
  • Zest ½ lemon
  • 2 stems fresh thyme, leaves finely chopped
  • 2 tablespoons chopped fresh chervil
