Pol Sambol (Coconut Sambol) (Nautilus)

Ingredients
  • ½ coconut, scraped
  • 1 tsp Maldives fish chips
  • ½ red onion, chopped
  • ½ green cayenne, sliced
  • 2 garlic cloves, finely chopped
  • 2 tsp ginger, grated
  • 4 to 5 curry leaves, roughly chopped
  • 2 tsp chilli flakes
  • ¼ tsp black pepper
  • ¾ tsp salt
  • 1 lime, juiced
Steps
  1. Put the fish chips and give a few pounds to start breaking them up. Make sure all fish chips have been ground finely.
  2. Add onion, green cayenne, garlic, ginger, curry leaves, chilli flakes, pepper and salt in a mortar and pestle and crush together to make a paste.
  3. Add the coconut and crush lightly to release the juices and combine until the mixture is completely blended together.
  4. Pour into a serving bowl and add lime juice, mixing together with your hands to ensure even mixing.
