Traditional Dublin Coddle
Ingredients
  • 2 tablespoons vegetable oil
  • 2 medium onions, thinly sliced
  • 4 ounces bacon, weighed without rind
  • 6 pork sausages
  • 2 medium carrots, peeled and finely sliced
  • 8 ounces white potatoes, peeled and finely sliced
  • 2 cups beef stock, or  chicken stock
  • Optional: Salt and pepper, to taste
