  • ¼ cup (35g) plain (all-purpose) flour
  • 1 ½ teaspoon ground cinnamon
  • Cinnamon anglaise
  • ¾ cup (180ml) pouring cream
  • 1 ⅓ cup (330ml) milk
  • 1 cinnamon stick
  • 4 egg yolks
  • ¼ cup (55g) caster (superfine) sugar
