  • 2 teaspoons smoked paprika
  • 4 cups vegetable stock
  • Water as needed
  • Salt as needed (most Cajun spices and many store-bought stocks are salted, so be cautious!)

  • 1 cup arborio rice, or other
  • 1 ⅓ cup water
  • ½ teaspoon salt

  • Thin sliced green onion
