Muffins are one of my favorite easy, nutrient dense mini-meals – easy to make, portable and packed with filling, healthy ingredients.
Ingredients
- You will need: measuring cups, measuring spoons, mixing bowl, muffin tin, rubber spatula, whisk
- ⅓ cup peanut butter (can use a nut butter or sunflower seed butter if you are sensitive to peanuts)
- 1 large egg
- ½ tsp vanilla extract
- 3 small extra ripe bananas, mashed very well
- ½ cup almond flour
- 4 servings (120 grams) I ❤️ Vanilla Protein powder
- 1 tsp baking soda
- 1 tsp ground cinnamon
- ½ tsp ground nutmeg
- ¼ tsp allspice
- ¼ tsp salt
