Soaking/simmering water the chiles to be really bitter - always use fresh water for blending chiles after hydrated.
Roast corn & sweet potatoes. New Mexico Chile sauce is great; also used jack fruit.
Steamed tamales 30 min; not 45.
Cool then release from husk nicely.
After 1st 45 min steaming, tamales were mush. Returned them to IP & cooked a 2nd time & firmed up.
Chilis Tip:
rather than roasting then rehydrating chilis, just boil them without roasting; helps bitterness.
made sec. filling of soy curls sauteed with onion & garlic then simmered in chili sauce.
For pumpkin tamale dough just mix masa, spices & herbs, pumpkin puree, by hand or mixer.

Same amount of masa, 1 -unsalted
can of corn, changes were 2 - tsp of baking powder, 1- 3/4 cup of sugar, 1 -TAB of cinnamon, 3 cups of almond milk.Filling=dark chocolate, coconut flakes and cashews. Cook rec time.
