Ingredients

  • 8 ounces cremini or white button mushrooms
  • 1 large red bell pepper, de-seeded, quartered and thinly sliced
  • 5 oz spinach leaves, washed and pat dried
  • ¾ cup (7 ounces) feta cheese, crumbled
  • 1 teaspoon aleppo pepper
  • Salt and freshly ground black pepper, to taste
  • subheading: For The Egg Wash:
  • 1 beaten egg
  • 1 tablespoon olive oil to brush the pide
