Ingredients
  • 1 lb chicken, pork or beef diced
  • ½ med onion diced
  • 1 c carrots sliced into small rounds
  • 2 to 3 garlic minced
  • 1 can Hatch green chili
  • 1 can diced tomatoes with chili
  • 2 cans white hominy
  • ½ tsp oregano
  • 1 tsp cumin
  • 2 tsp chili powder
  • 32 oz chicken broth
  • Avocado, cilantro and radish for garnish
Steps
  1. Sauté meat, onion, carrots in olive oil until onions are transparent
  2. Add chicken broth, tomatoes, Hatch chili, hominy and spices, bring to a boil
  3. Simmer 45 to 60 minutes until meat is tender
  4. Garnish with avocado, cilantro and sliced radish and a side of cornbread or tortillas
