  • 10 ounces  thin rice noodles
  • 3 tablespoons oil, divided
  • 1 pound boneless skinless chicken breasts, thinly sliced and cut into bite-sized pieces
  • 1 cup bean sprouts
  • ½ cup shredded carrots
  • 4 cloves garlic, minced
  • 3 eggs, whisked
  • 3 green onions, sliced into 1-inch pieces
  • toppings: lots of chopped peanuts, extra crushed red pepper flakes, lime wedges
  • subheading: SAUCE INGREDIENTS:
  • ⅓ cup packed brown sugar
  • ¼ cup fish sauce
  • ¼ cup  tamarind concentrate (please see note below)
  • 2 tablespoons soy sauce
  • juice of 1 fresh lime
  • ¼ teaspoon crushed red pepper flakes (or more/less to taste)
