Ingredients
  • 2 boxes Jiffy corn muffin mix
  • 1 pd ground beef
  • 1 can Rotel
  • 1 can creamed corn
  • 1 pkg taco seasoning mix
  • 2 cups shredded triple cheddar
  • ⅔ cup milk
  • 2 eggs, room temperature
  • 1 to 2 cups Mexican creamy melt cheese
  • sour cream for topping
Steps
  1. Stir together ingredients one at a time.
  2. Pour into prepared 9x13 prepared pan.
  3. Bake at 400° for 20 minutes.
  4. Remove and top with creamy melt cheese.
  5. Bake at 400° for 5 more minutes or until cheese on top makes a nice crust.
  6. Serve with sour cream for topping.
