Lemon Asparagus Pasta
Ingredients
  • 12 ounces spaghetti or other noodle
  • 1 pound asparagus trimmed and cut into 2-inch pieces
  • 4 tablespoons olive oil
  • 4 cloves garlic minced
  • 4 tablespoons all purpose flour
  • 3 cups unsweetened, unflavored cashew or almond milk
  • 1 ½ teaspoons salt or more to taste
  • ½ teaspoon ground black pepper
  • 2 lemons zest and juice
  • ½ teaspoon crushed red pepper optional
  • 2 tablespoons finely chopped parsley
  • ½ cup vegan parmesan cheese optional
