Ingredients
- Baking spray, for pan
- 2 lbs. Yukon Gold potatoes, cut into chunks
- 1 tablespoon dried oregano
- 1 teaspoon dried rosemary
- A dash of paprika
- 2 teaspoons Kosher salt, plus additional for sprinkling
- 1 teaspoon freshly ground black pepper, plus to taste
- 4 pounds bone-in, skin-on chicken thighs (About 8)
- 2 tablespoons garlic infused oil (see below note about infused oils)
- 2 tablespoons onion or shallot infused oil
