Spicy Peanut Noodles
Ingredients
  • 12 ounces rice noodles
  • ½ cup matchstick carrots or shredded carrots
  • ½ cup creamy peanut butter
  • ¼ cup honey or agave syrup
  • ¼ cup toasted sesame oil
  • 2 tablespoons rice vinegar or apple cider vinegar
  • 2 tablespoons lite soy sauce (or coconut aminos, or tamari)
  • 1 to 2 tablespoons sriracha, or to taste
  • 1 tablespoon minced garlic
  • 1 to 2 teaspoons ground ginger, or to taste (or about 2 to 3 tablespoons freshly grated ginger)
  • pinch cayenne pepper, optional and to taste
  • ½ cup diced salted peanuts, for garnishing
  • ⅓ cup fresh basil or cilantro, finely minced for garnishing
  • Salt, optional and to taste
  • Freshly ground black pepper, optional and to taste
