Xo Sauce Fried Rice with Chicken
Ingredients

  • 2 large eggs (beaten)
  • 1 tablespoon ginger (minced)
  • 1 clove garlic (a large clove, minced)
  • 1 small onion (diced into large pieces)
  • 2 tablespoons light soy sauce
  • ¼ teaspoon white pepper
  • ¼ teaspoon sugar
  • ¼ teaspoon salt
  • 3 to 4 tablespoons XO sauce (to taste; we used 4)
  • 2 cups bean sprouts (fresh mung bean sprouts)
  • 2 scallions (chopped)
  • 1 tablespoon Shaoxing wine
