One Pan Lemon Chicken & Orzo
Ingredients
  • Ingredients: Makes 4 servings
  • 1lb chicken breast, diced
  • 1 C orzo, uncooked (Jovial sells a cassava based orzo and banza sells a chickpea based orzo which is extra protein)
  • ½ lemon juice
  • 1 lemon sliced
  • 1 clove garlic
  • 3 C chicken broth (I use Kitchen Basics brand)
  • 1 bunch spinach, fresh (cut small if you’re serving to toddlers or omit)
  • 2 tbsp olive oil
  • 1 tbsp vegan butter (or 1 tbsp olive oil)
  • salt pepper to taste (I use 1 tsp salt and ½ tsp pepper on the chicken and then salt as needed after everything is finished cooking)
  • 1 tbsp Italian seasoning
  • note: ptional topping vegan parmesan
