  • ½ teaspoon almond extract
  • subheading: CREAM CHEESE FROSTING:
  • 8 oz. full fat brick cream cheese, room temperature (don't microwave!)
  • 2 Tablespoons unsalted butter, room temperature (don't microwave!)
  • 1 ¼ cups powdered sugar
  • 1 tablespoon lemon juice
  • 1 teaspoon lemon zest
  • 1 teaspoon vanilla extract
  • pinch of salt
  • subheading: FRUIT LAYER:
  • 4 to 5 cups (approx.) assorted fresh fruit: (I used 5 kiwi, 1 mangos, 9 raspberries, 10 strawberries and ½ cup blueberries.
  • 2 tablespoons apricot preserves (optional for glaze)
