Healthy and tasty riff on the very popular "egg roll in a bowl" recipes for the Instant Pot. Very quick and easy to make. A couple of suggested tweaks are in the recipe and in the Notes.
Ingredients
  • 1 pound ground turkey
  • ½ cup frozen corn (I used a 15-oz can, drained. I used the whole can.)
  • ½ cup black beans (I used a whole 15-oz can, rinsed and drained.)
  • 1 teaspoon chili powder (I'd double this, at least)
  • 1 teaspoon cumin (I'd double this, too)
  • 1 teaspoon oregano
  • 1 teaspoon garlic powder
  • [1 tsp salt]
  • ⅓ cup green onions, chopped [I used diced white onion because that's what I had. I think it was a fine swap.]
  • ⅓ cup chopped bell pepper
  • ⅓ cup chopped tomatoes
  • 1 package coleslaw mix (8-9 oz bag is a good size)
  • 1 package broccoli slaw mix (8-9 oz bag is a good size)

  • avocado
  • cilantro
  • taco sauce
  • sour cream
