Italian Cream Cake

Ingredients
  • 2 cups sugar
  • 1 stick margarine
  • ½ cup Crisco shortening
  • 5 eggs, separated
  • 2 cups flour
  • 1 teaspoon soda
  • 1 cup buttermilk
  • 1 can flaked coconut
  • 1 cup pecan, chopped
Steps
  1. Cream sugar and shortening. Add egg yolks, one at a time. Beat well.
  2. Add sifted dry ingredients alternately with buttermilk.
  3. Add coconut.
  4. Fold in beaten egg whites and pecans.
  5. Bake in 3 greased and floured pans at 350 degrees for 25 minutes.
  6. Ice with cream cheese frosting.
