Quinoa Carrot Cake Breakfast Cookies
Ingredients
  • ¾ cup raw Bob's Red Mill Quinoa
  • 1½ cups water
  • subheading: Dry:
  • 1 cup Bob's Red Mill Gluten-free All-Purpose Baking Flour
  • ½ cup freshly ground flax seed
  • 2 teaspoons ground cinnamon
  • ½ teaspoon ground ginger
  • Pinch sea salt
  • subheading: Wet:
  • ½ cup maple syrup
  • 2 tablespoons grape seed oil, or melted coconut oil, or walnut oil, or... any kind of oil you want, really!
  • 1 teaspoon pure vanilla extract
  • subheading: Add-ins:
  • ⅓ cup raisins
  • 1 cup shredded carrot, lightly packed, wrap in a clean kitchen towel and ring out extra juices
  • subheading: Optional Topping:
  • 2 teaspoons melted coconut butter
