  • 2.5 cups vegetable broth
  • 1 cup lentils (dry )
  • 1 onion, minced
  • 1 green bell pepper, diced
  • 1 carrot, peeled and diced
  • 2 garlic cloves, minced
  • 2 Tablespoons chili powder
  • 1 teaspoon kosher salt
  • 1 teaspoon ground chipotle chili pepper (optional)
