Eggplant Mesa'A'Ah (Egyptian Spiced Eggplant)
Ingredients
  • 2 large eggplants, sliced into 2cm-thick rounds
  • 2 ½ tbs extra virgin olive oil, plus extra to fry
  • 1 onion, thinly sliced
  • 6 garlic cloves, thinly sliced
  • 1 tbs tomato paste
  • 1 tsp ground cumin
  • 500g very ripe tomatoes, roughly chopped
  • 1 tsp caster sugar
  • Chargrilled pita bread, to serve
  • 1 tsp ground coriander
