The only suggestions I'll make are to toast the walnuts over medium heat in a skillet for 10 minutes, nuke the oil and garlic together for 45 seconds to remove raw garlic flavor, letting nuts and oil mixture cool for 15 minutes before proceeding with processing, and then stirring the cheese in AFTER processing the remaining ingredients.
Ingredients
  • 1 cup shelled walnuts, about 3 ½ ounces
  • 2 cups chopped parsley, about 1 bunch
  • ½ cup grated pecorino or Parmesan cheese
  • 3 cloves garlic, roughly chopped
  • ½ teaspoon salt
  • ½ cup extra virgin olive oil
