Instant Pot Rachel (Turkey Reuben) Rotini
Ingredients
  • 1 lb Rotini
  • 3 cups vegetable broth
  • 2 cups chicken broth
  • 1 to 2 tsp caraway seed
  • 1 brick cream cheese
  • 8 oz Cole slaw dressing (Marie’s)
  • 12 oz Cole slaw mixed veg
  • 1 lb chipped deli Turkey
  • 2 cups shredded Swiss or Mozzarella cheese
  • Russian or Thousand Island dressing
Steps
  1. 1) Add the Rotini to the Instant Pot, followed by the broth and caraway seeds. Make sure the pasta is mostly submerged under the broth
  2. 2) Secure the lid and hit “Manual” or “Pressure Cook” for 5 minutes at high pressure. Quick release when done
  3. 3) Stir in the Boursin (or cream cheese) and cole slaw dressing until fully melted into the excess broth
  4. 4) Add the turkey, cole slaw veggies, and shredded cheese and stir until the cheese becomes stretchy and combined with the sauce
  5. 5) Serve immediately and top with Russian or Thousand Island dressing and additional caraway seeds for garnish
  6. 6) Enjoy with some buttered, toasted rye bread!
