  • 1 tbsp. olive oil
  • 1 red onion, finely chopped
  • 1 red pepper, diced
  • 1 green pepper, diced
  • 2 garlic cloves, crushed
  • 1 green or red chilli, thinly sliced
  • 300 g long-grain rice, rinsed
  • 2 tsp. turmeric
  • 1 tsp. cayenne pepper
  • 1 tbsp. smoked paprika
  • 1 tbsp. chilli powder
  • 400 g tin chopped tomatoes
  • 320 ml vegetable stock
  • 1 lime, ½ juiced and zested, ½ cut into wedges
  • Coriander to serve, chopped
