Fresh Salsa (p207)

Ingredients
  • ⅔ cup diced cherry tomatoes
  • 2 Tbsp finely sliced red onion
  • 1 clove minced garlic
  • 3 tsp lime juice
  • 1 Tbsp olive oil
  • 1 Tbsp chopped fresh cilantro
  • ¼ tsp diced jalapeño (optional)
  • Salt and pepper, to taste
Steps
  1. Mix all ingredients together in a bowl. Tastes better if you allow a short time for ingredients to meld together before serving.
