Grilled Squash and Scallions with Chile-Honey Vinaigrette
Ingredients
  • 2 tbsp. vegetable oil
  • 1⁄2 tsp. crushed red chile flakes
  • 1 tbsp. champagne vinegar
  • 2 tsp. honey
  • 1 1⁄2 tsp. fresh lemon juice
  • Kosher salt and freshly ground black pepper
  • 1 1⁄2 lb. summer squash or zucchini, or a mix of both, cut into 2-by-1-inch pieces
  • 2 scallions, trimmed
  • 10 mint leaves, torn by hand
