Beef & Mushroom Guinness Pies
Ingredients

  • 2 Medium Brown Onions, Peeled & Halved
  • 2 Garlic Cloves Peeled
  • 800g Gravy Beef, cut into 2cm cubes
  • 250ml Beef Stock
  • 110ml Guinness
  • 1 Sprig of Thyme (or teaspoon of dried rubbed thyme)
  • 2 Bay Leaves
  • 1 Carrot
  • 100g Mushrooms, stalks removed and quartered
  • 1 Parsnip
  • 2T Cornflour
  • Maggie Beer’s Sour Cream PASTRY
  • 250g Flour (I use bakers, plain is fine)
  • 200g Chilled Butter, cubed
  • 125g Sour Cream
  • Milk for basting
