Vegan Tamagoyaki (Rolled Omelette)
Ingredients
  • 1⁄4 cup kombu dashi broth
  • 1⁄4 cup water
  • 1⁄2 cup chickpea (garbanzo bean) flour, I used Bob’s Red Mill
  • 1 teaspoon sugar (or more if you prefer a sweeter rolled omelette)
  • 1 teaspoon mirin
  • 1⁄8 teaspoon turmeric
  • 1 teaspoon soy sauce
  • 1⁄2 teaspoon baking powder
  • 4 tablespoons chickpea brine (aquafaba)
  • 1 sheet nori
