  • 2 Pink Lady® apples (grated, skin on)
  • 2 Medium Carrots
  • 2 large eggs (lightly whisked)
  • 130g 130g soya flour (or any wholemeal or all purpose flour)
  • 50g ground flaxseeds
  • 50g chopped walnuts (pecans work well too)
  • 75g soft brown sugar
  • 1.5 tsp baking powder
  • 2 tsp baking soda
  • 1 tsp cinnamon
  • ¼ tsp nutmeg
  • 100ml light olive oil
