Gluten-Free Sourdough Snickerdoodles
Ingredients
  • 200 grams butter, coconut oil for dairy-free
  • 215 grams sourdough starter discard
  • 2 eggs
  • 2 teaspoon vanilla extract
  • 200 grams sugar, you can use half brown sugar for more flavor
  • 320 grams gluten-free flour, I used 80g brown rice flour, 80g white rice flour, and 160g starch of choice (potato, corn, tapioca, etc.)
  • 50 grams almond flour, you can use more gluten-free flour if you don't want to use almond flour
  • 1 teaspoon xanthan gum
  • 1 teaspoon baking soda
  • ¼ teaspoon salt
