Bacon Jam
Ingredients
  • 1 lb bacon
  • 1 medium yellow onion
  • 2 French shallots
  • 4 garlic toes
  • ½ cup light brown sugar
  • ¼ cup good quality maple syrup
  • ⅓ cup apple cider vinegar
  • 1 teaspoon unsalted chili powder
Steps
  1. Cook the bacon crispy. Transfer the bacon to a paper towel lined plate. Reserve about 1 tablespoon of bacon fat in the pan.
  2. Fine dice the yellow onion and shallots. Add them to the pan and cook for about 15 minutes until caramelized.
  3. Mince the garlic toes.
  4. Add garlic, brown sugar, maple syrup, vinegar, cooked bacon, and chili powder to the pan. Bring to a strong simmer, reduce heat slightly, cook, stirring frequently, until thick and jam-like. About 10 to 15 minutes.
  5. Cool before placing in storage container. Small mason jar works well for me. Refrigerate, fully chilling before serving
Notes
  • Good with cheese and crackers. Good on burgers. Good with a lot of things.
