Ingredients
- 1 lb bacon
- 1 medium yellow onion
- 2 French shallots
- 4 garlic toes
- ½ cup light brown sugar
- ¼ cup good quality maple syrup
- ⅓ cup apple cider vinegar
- 1 teaspoon unsalted chili powder
Steps
- Cook the bacon crispy. Transfer the bacon to a paper towel lined plate. Reserve about 1 tablespoon of bacon fat in the pan.
- Fine dice the yellow onion and shallots. Add them to the pan and cook for about 15 minutes until caramelized.
- Mince the garlic toes.
- Add garlic, brown sugar, maple syrup, vinegar, cooked bacon, and chili powder to the pan. Bring to a strong simmer, reduce heat slightly, cook, stirring frequently, until thick and jam-like. About 10 to 15 minutes.
- Cool before placing in storage container. Small mason jar works well for me. Refrigerate, fully chilling before serving

- Good with cheese and crackers. Good on burgers. Good with a lot of things.
