  • 500g washed and trimmed rhubarb, sliced into 1cm thick pieces

  • 30g dried cranberries or raisins
  • 2 tablespoons red wine vinegar
  • 1 tablespoon red wine
  • 1 teaspoon mustard seeds
  • ¼ teaspoon sea salt
  • Pinch of ground cinnamon, allspice and cayenne pepper
  • ¼ cup finely chopped red onion
  • ⅓ cup thinly sliced celery
  • 1 teaspoon finely grated orange zest
  • 1 small red chilli, finely chopped
  • 1 teaspoon lemon or lime juice
