This tastes wonderful. It is a very small amount (2-3 tbsp per person for 6 people) so would need to double for a small gathering or triple/quadruple for a party. And probably needs to be kept warm in a crock pot, because the cheese starts solidifying very quickly after being taken out of the oven. I'm thinking I may use less mozzarella and more monterey jack to cut down a bit on the stringiness and solidifying.
  • 2 tablespoons olive oil
  • 1 ⁄2 small onion , chopped
  • 1 garlic clove , minced
  • 1 jalapeno, seeded and diced
  • 2 ounces chorizo sausage
  • 4 ounces mozzarella cheese , cubed
  • 4 ounces monterey jack cheese , cubed
  • 3 ounces goat cheese, crumbled
  • 6 small flour tortillas
