Ingredients

  • 4 - medium sweet potatoes

  • 1.5 cups (1 can) - cooked garbanzos
  • ½ teaspoon - cumin
  • ½ teaspoon - paprika (I used smoked)
  • ½ teaspoon - coriander
  • ½ teaspoon - cinnamon
  • lemon juice and aquafaba to coat the garbanzos
  • subheading: Garlic Herb Sauce:
  • ¼ cup - cooked garbanzos
  • 1 Tablespoon - tahini (optional)
  • 1 T - lemon juice
  • 1 teaspoon - dried dill
  • 3 cloves - garlic
  • plain soy or nut milk to thin
  • subheading: Parsley Pico:
  • ½ cup - cherry tomatoes, chopped
  • ¼ cup - chopped parsley
  • 2 T - lemon juice
  • 1 to 2 T - chopped red onion
  • splash of balsamic vinegar to taste
  • subheading: Caesar Dressing:
  • ½ cup - water or plain soy/nut milk
  • ½ cup - cashews or white beans
  • 2 T - lemon juice
  • 2 T - mustard
  • 1 to 2 - dates
  • 1 to 2 cloves - garlic
  • 1 teaspoon - Italian seasoning
  • black pepper to taste or on top of the salad
  • subheading: Caesar Salad:
  • 1 head - Romaine, chopped
  • Red bell pepper and/or tomato
  • Ground cashews or walnuts to sprinkle on top
  • Avocado
  • Black pepper
  • The dressing
