Pistou soup with Sausage
Veggie linguisa soup

Ingredients
  • 1 lb leeks
  • ½ lb linguisa, cut into bit size pieces
  • 1 cup chopped carrots
  • 1½ cups thin skinned potatoes
  • 6 cups EACH chicken broth and water
  • ½ cup split pea
  • ½ lb green beans, 1 inch lengths
  • ⅓ cup 2 inch pieces of spaghetti or other pasta
  •  
  • Pistou: Mix
  • 4 cloves minced garlic
  • 6 oz tomato paste
  • ¾ cup grated Parmesan cheese
  • ¼ cup minced parsley
  • 1½ Tbsp dry basil leaves
  • ⅓ olive oil
Steps
  1. Cut of and discard all but 3 inches of green tops of leeks. Split leeks lengthwise, rinse well and slice. Chop linguisa into pieces, in large pan over medium heat, brown sausage. Add carrots and leeks, stir until leeks are limp.
  2. Add potatoes, broth, water and peas.
  3. Simmer covered until soft, about 1 hour.
  4. Stir in beans, pasta and Pistou. Simmer until pasta is barely tender to bite.
Notes
  • I make pasta separately an add to individual servings. Keeps the pasta from absorbing more liquid from soup.
